Abstract
Mlijeko magarica posljednjih je nekoliko godina predmetom mnogih znanstvenih istraživanja zbog velikog potencijala za korištenje u ljudskoj prehrani. Velika sličnost u sastavu mlijeka magarica i humanog mlijeka čini ovu namirnicu najidealnijom zamjenom za majčino mlijeko, pogotovo kod djece alergične na protein kravljeg mlijeka. Fermentacijom mlijeka magarice produljujemo vijek trajanja mlijeka te povećavamo fiziološku vrijednost samog proizvoda dodatkom kultura koje se koriste za njihovu proizvodnju. No, kako se sastav mlijeka magarice razlikuje od sastava ostalih vrsta komercijalnih mlijeka (kravljeg, kozjeg i ovčjeg), tehnologija proizvodnje fermentiranih mlijeka od mlijeka magarice također će se razlikovati.
Abstract (english)
Donkey milk has been the subject of many scientific researches for the last few years due to its great potential for use in human nutrition. A chemical compositon resemblance of donkey milk and humak milk makes this food the most ideal substitute for breast milk, especially in children allergic to cow's milk protein. Fermentation of donkey milk prolongs its shelf life and the microbial culture added in the process of manufacturing increases physiological value of the product. Considering the difference in composition of donkey milk compared to milk of traditional dairy species (cattle, goats and sheep) technology production of fermented donkey milk will also vary.
