Abstract
Listerioza je bolest koja se prenosi hranom a bakterija Listeria monocytogenes je jedan od najznačajnijih javnozdravstvenih problema i uvjet prometa hrane u svijetu. Prije svega povezana je s konzumacijom gotovih proizvoda. U ovom radu je pretražena svježa riba (brancin) i riblji proizvodi (dimljena i marinirana riba, orada i brancin) na nalaz bakterije L. monocytogenes. Također, pretraženi su uzorci brisova uzeti s radnih površina i ruku djelatnika u pogonima prerade morske ribe. U pretraživanim uzorcima svježe, dimljene i marinirane ribe bakterija L. monocytogenes nije utvrđena. Međutim, u uzorcima marinirane i dimljene ribe utvrđena je L. inocua. U jednom uzorku brisa utvrđena je L. monocytogenes dok je L. inocua utvrđena na radnim površinama obrade, sortiranja i prerade ribe, odnosno na poziciji evisceracije, kontrole obrade ribe i na rukama radnika na operaciji filetiranja ribe.

Listeriosis is a foodborne disease and Listeria monocytogenes is one of the most important public health problems as well as the condition of transport of food in the world. Primarily it is associated with the consumption of ready-to-eat food products. This paper examines fresh fish (sea bass) and fishery products (smoked and marinated fish, sea bream and sea bass) on the findings of L. monocytogenes. Swab samples taken from working surfaces and hands of workers in fish processing plants have also been examined. In the examined samples of fresh, smoked and marinated fish L. monocytogenes has not been established. However, in samples of marinated and smoked fish L. inocula was found. In one swab sample L. monocytogenes was found while L. inocula was found on workig surfaces for processing, sorting and processing of fish, or the position of evisceration, control of fish processing and on the hands of workers at fish filleting operations.
