Abstract
Kvaliteta sirovog mlijeka određena je različitim čimbenicima kao što su kemijski sastav, fizikalna svojstva, higijenska kvaliteta, odnosno broj somatskih stanica i ukupan broj mikroorganizama te moguća prisutnost različitih rezidua u mlijeku. Kvaliteta mlijeka utječe na njegova preradbena svojstva i na kvalitetu mliječnih proizvoda, izraženu njihovim organoleptičkim svojstvima i higijensko-zdravstvenom ispravnosti. Cilj istraživanja je utvrditi higijensku i mikrobiološku kvalitetu sirovog mlijeka iz 10 mljekomata na području grada Zagreba i Zagrebačke županije. Analize broja somatskih stanica i ukupnog broja mikroorganizama u uzorcima mlijeka prikupljenih u razdoblju od prosinca 2015. do veljače 2016. godine, provedene su akreditiranim metodama u Referentnom laboratoriju za mlijeko i mliječne proizvode, Agronomskog fakulteta Sveučilišta u Zagrebu. Istraživanje je provedeno u okviru VIP projekta naslova: Inovativna tehnologija u kontroli mljekomata u cilju povećanja kvalitete i konkurentnosti proizvođača mlijeka. Cilj projekta je utvrditi postojeću kvalitetu sirovog mlijeka iz mljekomata i utjecati na poboljšanje iste. Kod 23% analiziranih uzoraka, utvrđen je broj somatskih stanica veći od dozvoljenih 400,000/mL. Na osnovu rezultata analiza, može se zaključiti da 57% analiziranih uzoraka ne udovoljava mikrobiološkoj kvaliteti sirovog mlijeka, propisanoj Pravilnikom o pregledu mlijeka namijenjenog javnoj potrošnji (2010). Upravo zbog toga, očekuje se da će sustavan način kontrole poboljšati kvalitetu sirovog mlijeka iz mljekomata te da će potaknuti proizvođače na provođenje dobre proizvođačke prakse.

Quality of draw milk is determined by various factors like chemical composition, physical properties, hygienic quality, regarding somatic cell counts and total number of microorganisms and with possible presence of various residues in milk. Milk quality affects on processing characteristics and quality of dairy products, expressed with their organoleptic properties, hygiene and health safety. Aim of study is to determine hygienic and microbiological quality of draw milk from 10 milk vending machines in the city of Zagreb and Zagreb County. Analysis of somatic cell count and total number of microorganisms in milk samples, collected in the period from December 2015. to February 2016., were conducted by accredited methods in Reference laboratory for milk and dairy products, Faculty of agriculture University of Zagreb. Research was performed within the VIP project: Innovative technology in control of milk vending machines in order to increase quality and competitiveness milk producers. Aim of the project is to determine current quality of draw milk from milk vending machines and effect on improvement of quality. In 23% of analyzed samples was determined somatic cell count higher than allowed 400,000/mL. According to the results, it can be concluded that 57% of analyzed samples does not satisfy microbiological quality of draw milk, prescribed by Regulations of the inspection milk for public consumption (2010). Because of this, it is expected that systematic way of control will improve quality of draw milk from milk vending machines and encourage producers on implementation of good manufacturing practice.
