Abstract
Mikrobni egzopolisahardi su vrsta biopolimera koju proizvode mnoge vrste gram-pozitivnih i gram-negativnih bakterija te isto tako i drugi mikroorganzimi kao što su gljive i neke vrste algi. Vrsta su biopolimera koji su zbog svojih rasponom velikih fizikalnih i kemijskih svojstava našli široku primjenu u različitim industrijama poput farmaceutske, kozmetičke, prehrambene i drugih. Sama uloga egzopolisaharida ovisi o biotopu na kojemu se mikroorganizmi nalaze, a daljnja proizvodnja ovisi o temperaturi, intezitetu svjetla i tlaku. Najvažnije uloge egzopolisaharida su formiranje biofilma i zaštita bakterije. Dijele se na homopolisaharide i heteropolisaharide. Homopolisaharidi su izgrađeni od jedne vrste monosaharida i toj skupini polisaharida pripadaju dekstran, kurdlan, pululan i levan. Heteropolisaharidi su izgrađeni od više vrsta monosaharida. Heteropolisaharidima pripadaju ksantan i gelan guma.

Microbial exopolysaccharides are a type of biopolymers produced by many different species of gram-positive and gram-negative bacteria, and also by other microorganisms, such as fungi and some types of algae. They are a type of the biopolymers which, due to the wide range of physical and chemical properties, have found their use in various forms of industrial production, such as pharmaceutical industry, cosmetic industry, food industry etc. The role of EPS depends on the biotope in which micro-organisms are found, while further production depends on the temperature, light intensity and pressure. The most important role of EPS is biofilm formation and bacterial protection. They can be divided into homopolysaccharides and heteropolysaccharides. Heteropolysaccharides are made out of one type of monosaccharide and polysaccharides belonging to this group are dextran, curdlan, pullulan and levan. Heteropolysaccharides are made out of several types of monosaccharides. Heteropolysaccharides are xanthan and gellan gum.
