Abstract
Ulja su važan dio prehrane čovjeka. U ovom istraživanju ispitivala se antioksidativna aktivnost maslinovog, suncokretovog, crnog i bučinog ulja te antioksidativna aktivnost ekstrakta vitamina E dobivenog iz prethodno navedenih vrsta ulja. Pomoću DPPH metode prikazana je antioksidativna aktivnost ulja i ekstrakta vitamina E. Pomoću spektrofotometra mjerena je promjena boje uzorka pri 515 nm. Gubitak signala DPPH radikala prikazuje antioksidativnu aktivnost određenog uzorka. TEAC metodom izražen je antioksidativni kapacitet. U metodi se koristi Trolox ekvivalent koji je analog vitaminu E te služi kao referentni standard pomoću kojega su izraženi rezultati dobiveni DPPH radikal metodom. Maslinovo ulje je pokazalo najveću antioksidativnu aktivnost tj gubitak signala DPPH radikala iznosio je 71%, iza njega slijedilo je suncokretovo ulje (69%), zatim crno (59%) i bučino(53%). Kod ekstrakata vitamina E najveći gubitak signala imao je ekstrakt vitamina E iz suncokretovog ulja (28%), pa iz crnog (20%), zatim iz maslinovog ulja (18%), ta najmanju antioksidativnu aktivnost pokazao je ekstrakt vitamina E iz bučinog ulja (10%).
Abstract (english)
Oils are an important part of the human diet. In this study I was testing the antioxidant activity of olive oil, sunflower oil, black oil and pumpkin seed oil as well as the antioxidant activity of vitamin E extract derived from the before mentioned oils. The DPPH method depicts the antioxidant activity of the oils and the extract of vitamin E. Using a spectrophotometer, the sample color change was measured at 515 nm. The loss of the DPPH radical signal shows antioxidant activity of a particular sample. The TEAC method was used to express the antioxidant capacity. The method uses a Trolox equivalent that is analogue to vitamin E and serves as a reference standard to express the results obtained by the DPPH radical method. Olive oil showed the highest antioxidant activity of the DPPH radical signal loss at 71%, followed by sunflower oil (69%), then black oil (59%) and lastly pumpkin seed oil (53%). Concerning vitamin E extracts, the sunflower oil (28%) had the highest signal loss, followed by the black oil (20%), then olive oil (18%), and lastly the pumpkin seed oil (10%) which showed the least antioxidant activity.
