Abstract	Polimorfija je sposobnost neke tvari da kristalizira u dva ili više oblika koji se međusobno razlikuju po kristalnoj strukturi, te fizikalnim i kemijskim svojstvima. Kakao maslac, koji je jedan od glavnih sastojaka čokolade, jedan je od takvih spojeva. On ima šest polimorfa, od kojih se jedan smatra najboljim za izradu čokolade, dok ostali ili nemaju zadovoljavajuće fizikalne osobine, poput izgleda i teksture, ili nisu stabilni te brzo prelaze u stabilnije oblike.
