Abstract
Ovaj diplomski rad sadrži pregled najvažnijih uzročnika zoonoza na području Europske unije s posebnim naglaskom na Republiku Hrvatsku. Bolesti uzrokovane kontaminiranom hranom ugrožavaju zdravlje ljudi diljem svijeta. Upravo zbog toga, sigurnost hrane je među vodećim prioritetima svjetskih zdravstvenih organizacija poput EFSA-e, WHO-a, OIE-a, Radne grupe za zoonoze itd... Ovaj rad, u svojoj suštini ukazuje na potrebu prepoznavanja i praćenja uzročnika bolesti od samog početka proizvodnje do gotovog proizvoda te informiranja potrošača o metodama prevencije u vlastitom domaćinstvu. Rad je koncipiran u nekoliko cjelina. U uvodu su ukratko nabrojani najčešći kontaminanti i štetne tvari u hrani animalnog porijekla koji mogu ugroziti zdravlje ljudi. U drugoj cjelini opisani su uzročnici bolesti, izvori i načini prijenosa. U završnom dijelu rada prikazan je ukupan broj oboljelih životinja i ljudi unutar EU i najčešće kontaminirane namirnicama životinjskog podrijetla.
Abstract (english)
This graduate paper provides an overview of the most important zoonotic agents in the European Union, with special emphasis on the Republic of Croatia. Diseases caused by contaminated food endanger the health of people around the world. For this reason, food safety is among the top priorities of world health organizations such as EFSA, WHO, OIE, Zoonoses working group, etc. This work, in its essence, points to the need to recognize and monitor the pathogens in the beginning of production up to the end and informing the consumer about methods of prevention in their own household. Work has been conceived in several parts. In the introduction are briefly listed the most common contaminants and harmful substances in foods of animal origin that can endanger human health. In the second part, pathogens, sources and means of transmission are described. The final part of the paper presents the total number of infected animals and humans within the EU and most frequently contaminated foodstuffs of animal origin.
