Abstract
Polifenolni spojevi predstavljaju jednu od najrasprostranjenijih grupa prirodnih spojeva. Mogu se koristiti u različitim granama industrije, od prehrambene, farmaceutske sve do kozmetičke. Vrlo važnu ulogu imaju u proizvodnji vina, a nakon završene vinifikacije ostaju i u komini grožđa. Komina sadrži brojne polifenolne spojeve, te se stoga može smatrati vrijednom sirovinom za njihovo komercijalno dobivanje. U ovom radu, korištena je komina dobivena nakon vinifikacije slijedećih sorata: 'Babić', 'Cabernet Cortis', 'Chancellor', 'Leon Millot', 'Marechal Foch', 'Merlot', 'Monarch' i 'Regent'. Analizom varijance određena je signifikantnost razlike između sorata za sadržaj pojedinih polifenolnih spojeva u kožicama i sjemenkama komine. Najveći maseni udio antocijana određen je u kožicama komine sorata 'Chancellor' i 'Regent'. 'Regent' se ističe i kao sorta s najvećim masenim udjelom flavonola zajedno sa sortom 'Monarch'. U slučaju sorte 'Cabernet Cortis' određen je najveći maseni udio flavan-3-ola i galne kiseline u sjemenkama komine, dok 'Marechal Foch' sadrži najviše flavan-3-ola u kožicama komine.

Polyphenolic compounds represent one of the most widespread groups of natural compounds. They can be used in many industries, such as food industry, pharmaceutical and cosmetic industry. They play a very important role in wine production, and after vinification they are left in the grape marc. Grape marc has many polyphenols, and can therefore be considered a valuable source for their comercial production. In this study, the used grape marc was obtained from vinification of the following cultivars: 'Babić', 'Cabernet Cortis', 'Chancellor', 'Leon Millot', 'Marechal Foch', 'Merlot', 'Monarch' and 'Regent'. Significant difference between the polyphenol contents of various cultivars in grape skins and seeds was determined by variance analysis. The highest amount of anthocyans was found in skins of the 'Chancellor' and 'Regent' grape marcs. 'Regent', along with 'Monarch', is the cultivar with most flavonol contents. 'Cabernet Cortis' cultivar was found to contain the most flavan-3-ols and gallic acids in grape seeds, and 'Marechal Foch' had the most flavan-3-ols in grape skins.
