Abstract
Cilj ovog rada bio je utvrditi utjecaj pasmine, spola i dobi pri klanju na odlike kvalitete trupova i mesa junadi. U istraživanju je korišteno 940 životinja Simental pasmine (456 muškoga i 484 ženskoga spola) te 768 križanaca simentalske i mesnih pasmina (498 muškoga i 270 ženskoga spola). Klaonička dob junadi iznosila je od 12 do 20 mjeseci. Nakon klanja i obrade trupova izvršena su mjerenja klaoničke mase trupova, ocjena konformacije trupova (EUROP sustav) i prekrivenost masnim tkivom (ocjene 1-5). Parametri boje i pH izmjereni su 24 sata post mortem na presjeku m. longissimus dorsi u visini 6. i 7. rebra, na desnoj polovici. Rezultati praćenja parametara kakvoće obrađeni su statističkim programom SAS (SAS Institut, 1999) korištenjem GLM postupka. Istraživanjem je utvrđena značajno veća klaonička masa križanaca nego čistokrvne Simental pasmine, kao i povoljnije vrijednosti parametara boje. Obradom podataka utvrđena je razlika u klaoničkoj masi i pokazateljima boje između spolova u korist muških jedinki. Nadalje, vidljive su oscilacije u srednjim vrijednostima L*, a* i b* uzevši u obzir klaoničku dob junadi. Iz navedenog stoga možemo zaključiti kako su križanci pogodniji za proizvodnju mesa gledajući kvalitativno i kvantitativno, isto kao i muške jedinke naspram ženskih. Međutim, utvrženo je i kako dob može pozitivno utjecati na proizvodnje pokazatelje i senzorne karakteristike mesa.

The aim of this paper was to determine the effect of breed, gender and age on carcass trait and beef meat quality. In the researche was used 940 animals from Simental breed (456 male and 484 female) and 786 hybrids of a Simental and meat breed (498 male and 270 female). Slaughter age was from 12 to 20 months. After slaughter, carcass weight, body conformation grades (EUROP system) and coverage with fat tissue (grades 1-5) were taken. Color and pH parameters were measured 24 hours post mortem on cut m. Longisimmus dorsi in height of 6-7 rib, on right half. Tracking results of parameters quality were processed with statistic program SAS (SAS Institute, 1999.) using the GLM procedure. It is determined highly bigger carcass weight of crossbreeds then the Simental breed as the favorable valuables of color parameters. There were difference between carcass weight and indicators of color between gender in benefit for the males. Further, oscilations were visible in medium valuables L*, a* i b* at different slaughterat age of the beef cattle. It can be concluded that the crossbreeds are more suitable for meat production then the Simental breed. Meat of male animals are more susceptible for production than the females. However, it was fortified that the age can positively influence on meat production indicators and sensory meat characteristics.
