Abstract
Diplomski rad analizom multispektralnih slika i usporedbom rezultata sa standardnom metodom procjene zrelosti pomoću sheme COPLAC® determinira različite faze zrelosti ploda banane. Predmet istraživanja je plod Cavendish banane (Musa AAA) s Kanarskih Otoka podijeljen u sedam kategorija definiranih prema boji kore. Rađene su tri serije analiza od kojih se jedna sastoji od sedam plodova, a druge dvije od 14 plodova. Plodovi su čuvani ukupno 16 dana na 12°C, a 24 ploda su izložena djelovanju etilena u trajanju od četiri dana. Istraživanje je popraćeno multispektralnim slikama uzoraka, koje su kasnije analizirane u programu MATLAB. Istraživanje je pokazalo kako infracrveni kanal jako dobro odvaja plod od pozadine te pokazuje vrlo dobro oblik ploda, ali ne pokazuje razliku u stupnju zrelosti. Razlike u zrelosti plodova bolje se razlikuju crvenim kanalom. Etilen je ključan hormon pri dozrijevanju plodova, a plodovi koji nisu bili izloženi određenoj koncentraciji etilena nisu postigli jednaku zrelost. Tijekom istraživanja upotrijebljene su dvije komore. U jednoj komori se etilen raspršuje od stražnje strane komore prema naprijed, a u drugoj se s vrha komore etilen raspršuje u dozama prema dolje. Premda su plodovi banane raspoređeni u sve djelove obiju komora kako bi se istražilo eventualni utjecaj načina aplikacije etilena, pokazalo se kako položaj ploda u komori nije utjecao na njegovo dozrijevanje. Zaključak istraživanja je prijedlog kako bi se sortiranje plodova banane olakšalo upotrebom multispektralnih kamera zbog ograničenja ljudskog faktora, točnije ljudskog oka, pošto ono nije u mogućnosti determinirati procese u pulpi ploda banane.

Thesis analysis of multispectral images and comparing the results with the standard assessment method by COPLACA® organization determines different maturity stages of the banana fruit. The subject of research is the fruit of a banana (Musa AAA), Cavendish type, grown in Canary Islands divided into seven categories defined by the color of the crust. They are divided according to a series of seven fruits and in two series of 14 fruits. The fruits were stored a total of 16 days at 12 ° C and 24 fruits were exposed to ethylene for a period of four days. The study is accompanied by multispectral images of samples, which were later analyzed in the program MATLAB. Research has shown that infrared channel successfully separated the fruit from the background and showed very precise fruit shape, but doesn`t show the different level of maturity. The level of maturity is better distinguished with the red channel. Ethylene is a key hormone in fruit ripening. Categories that had not been exposed to a certain concentration of ethylene have not reached the same maturity. For the research we used two chambers. In one chamber ethylene was sprayed from the rear to the front side of the chamber and in the second chamber ethylene was sprayed in doses from the top down. The banana fruits were evenly distributed in all parts of both chambers to examine possible differences of the impact of ethylene. It was shown that the position of the fruits in the chamber did not affect its maturation.
