Abstract
Češnjak (Allium sativum L.) ima značajnu ulogu u obrani ljudskog organizma od različitih bolesti, zahvaljujući visokom sadržaju antioksidacijskih tvari. Brojna istraživanja provedena na češnjaku dokazala su prisutnost antioksidacijskih i fenolnih spojeva, nekoliko sumpornih spojeva i vitamina. Cilj ovog istraživanja bio je ispitati razlike u sadržaju ukupnih fenola, askorbinske kiseline i ukupne antioksidacijske aktivnosti četiri kultivara ozimog slavonskog češnjaka, te utvrditi postojanje korelacija između tih parametara. Sadržaj askorbinske kiseline, ukupni sadržaj fenolnih spojeva, te ukupna antioksidacijska aktivnost četiri kultivara slavonskog ozimog češnjaka određeni su spektrofotometrijski. Genetička raznolikost kultivara ozimog slavonskog češnjaka značajno je utjecala na sadržaj askorbinske kiseline i ukupnu antioksidacijsku aktivnost. Ukupna antioksidacijska aktivnost bila je u značajnoj pozitivnoj korelaciji sa sadržajem askorbinske kiseline (r=0,6495; p=0,006), dok između sadržaja ukupnih fenola i ukupne antioksidacijske aktivnosti nije bila utvrđena značajna povezanost. Kultivar 1 (PFO 1) imao je najveću antioksidacijsku aktivnost (8,006 mol Trolox/g svj.tv.) i najveći sadržaj askorbinske kiseline (8,5705 mg askorbinske kiseline/100 g svj.tv.), a time se pokazao kao najkvalitetniji od četiri ispitivana kultivara.

Garlic (Allium sativum L.) has a significant role in the defence of the human body against various diseases due to the high content of antioxidative substances. Numerous studies conducted on garlic, have proved the presence of antioxidants, phenolic compounds, sulfur compounds and several vitamins. The aim of this sudy was to investigate the differences in the content of total phenols, ascorbic acid and total antioxidant activities of four winter Slavonian garlic cultivars, and to establish correlations between these parameters. The total antioxidant activity and the content of ascorbic acid and total phenols in four cultivars of winter Slavonian garlic (Allium sativum L.) were determined spectrophotometrically. Genetic diversity of winter Slavonian garlic cultivars (Allium sativum L.) significantly affected the content of ascorbic acid and the total antioxidant activity. The total antioxidant activity significantly positively correlated with the content of ascorbic acid (r = 0.6495, p = 0.006), while the content of total phenols and total antioxidant activity were not significantly related. Cultivar 1 (PFO 1) had the highest antioxidant activity (8.006 mol Trolox /g FW) and the highest ascorbic acid content (8.5705 mg ascorbic acid/100 g FW) and therefore the best quality of the four tested garlic cultivars.
