The projection of a new product that would meet the demands of contemporary consumers, requires a new approach to the concept and development of a new product or at creating addes value to an already existing product. Cooperative organisations should have an important role when it comes to organisation and concentration of production. It should also encourage an innovative access to the exploitation of biological potential of herbs in the coastal area of the Republic of Croatia, develop products with additional value, new and functional products, develop concepts of new products with Mediterranean omen and generally develop competitiveness of primary agricultural production which should be followed by nutritional and adaption industry as framework for economic development of whole region. Although the cooperative organisations are recognized as a very good organization modelin Europe, and even though every third resident of Europe is a member of some cooperatives, co-operatives in Croatia are still not recognizes enough. There are 263,000 cooperatives registered in Europe, which provide jobs for nearly 5.5 million people. Regarding the development of cooperatives within the European Union, Italy is dominating toher countries by having over 41,000 cooperatives with over 13 million members and about 1.1 million employees. The United Nations of 2012 declared the International Year of Cooperatives.The greatest advantage of the co-operative is that the employees themselves can be members of the co-operative and as such have control over the employment and processes of making key decisions.The challenge that is still ahead of us is the implementation of the cooperative principles. Modro zelena is a cooperative organization based in Metković, which has been active since 2004 in the area of Neretva delta and is engaged in the production of organic products, including olive, grapevine, citrus, and aromatics such as lavender and sage.
