Abstract	HACCP sustav je važan dio vinarije tijekom cijelog procesa proizvodnje i prerade grožđa pa sve do distribucije i plasiranja proizvoda na tržište do potrošača. HACCP sustav uključuje HACCP tim koji vodi HACCP sustav. Sustav se temelji na 7 načela i programskih preduvjeta. Poljoprivrednoj zadruzi „Ivanec“ cilj je proizvesti kvalitetan, a prije svega siguran proizvod za svoje potrošače. Kroz ovaj rad prikazat će se na koji način HACCP sustav funkcionira u podrumu vinarije, koje su kontrolne točke i na koji način se one kontroliraju, te zašto je važna higijena prostora, opreme, te samih radnika. Opisivat će se aktivnosti tijekom povlačenja proizvoda sa tržišta ako on predstavlja opasnost za potrošača.
Abstract (english)	The HACCP system is an important part of the winery during the entire process of production and processing of grapes up to the distribution and marketing of products to consumers. HACCP system includes HACCP team that leads the HACCP system. The system is based on seven principles and software requirements. Agricultural cooperative "Ivanec" goal is to produce high quality, and above all, safe products for its customers. Through this work will show how the HACCP system is working in the basement of the winery, which control points are and how they are controlled, and why is it important hygiene space, equipment, and workers themselves. Will describe the activities during the withdrawal from the market if it poses a danger to consumers.
